Have this with a glass of dry sherry and wish to God you were eating this in Spain. If you close your eyes, this Spanish chorizo might just get you there.
2 tbs olive oil
1 white onion, diced
2 red/yellow/orange bell peppers, diced
2 roma tomatoes, peeled and diced
